Read instructions and get ready to cook
Cook the rice
In a saucepan, combine rice with 2 cups water. Bring to a boil, then reduce heat to low. Cover and simmer for 15-20 minutes until water is absorbed. Fluff with a fork and set aside.
Prepare the vegetables
Wash and deseed peppers, then slice into strips. Peel and slice the onion. If using frozen corn, thaw it.
Cook the chicken
Cut chicken into small pieces. Heat oil in a large skillet over medium-high heat. Add chicken and cook until no longer pink, about 6-8 minutes. Add half the spices (such as cumin, chili powder, and oregano). Stir to coat chicken with spices. Remove chicken from pan and set aside.
Cook the vegetables
In the same skillet, add more oil if needed. Add peppers and onions. Cook for 5-6 minutes until softened. Add corn and remaining spices. Cook for 2 more minutes.
Combine chicken and vegetables
Return chicken to the skillet with vegetables. Stir to combine and heat through.
Warm the tortillas
Warm tortillas according to package directions. You can microwave them covered with a damp paper towel for 30 seconds. Or heat in a dry skillet for 30 seconds per side.
Assemble the burritos
Lay a tortilla flat on a work surface. Place 1/4 of the rice in the center, forming a line. Top with 1/4 of the chicken and vegetable mixture. Add 1/4 of the cheese and a spoonful of salsa.
Fold the burritos
Fold in the sides of the tortilla. Fold up the bottom over the filling. Roll tightly away from you to form a burrito. Repeat with remaining tortillas and filling.
Toast the burritos (optional)
Place burritos seam-side down in a clean skillet over medium heat. Cook for 1-2 minutes per side until golden and crisp.
Serve
Serve immediately, whole or cut in half. Offer additional salsa on the side if desired.
