Read instructions and get ready to cook
Prepare the oven
Preheat the oven to 375°F (190°C).
Cook the chicken
Heat olive oil in a large skillet over medium heat.
Season the chicken
Season chicken breasts with salt and pepper. Cook until no longer pink, about 6-8 minutes per side.
Shred the chicken
Remove chicken from skillet and let it cool slightly. Shred the chicken using two forks.
Prepare vegetables
Finely mince garlic cloves and finely chop onion.
Sauté vegetables
In the same skillet, heat remaining olive oil. Sauté minced garlic and chopped onion until softened, about 3-4 minutes.
Prepare herbs
Finely chop basil and parsley.
Make filling
In a large bowl, combine shredded chicken, ricotta cheese, half of the mozzarella, half of the Parmesan, eggs, sautéed garlic and onion, chopped basil and parsley, nutmeg, and remaining salt and pepper. Mix well.
Prepare sauce
In a separate bowl, mix tomato sauce with heavy cream.
Assemble cannelloni
Fill each cannelloni tube with the chicken mixture using a spoon or piping bag.
Arrange in baking dish
Spread a thin layer of sauce in a 9x13 inch baking dish. Arrange filled cannelloni in a single layer.
Add sauce and cheese
Pour remaining sauce over cannelloni. Sprinkle with remaining mozzarella and Parmesan cheese.
Bake
Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until cheese is golden and bubbly.
Serve
Let cool for 5 minutes before serving.
