Steps

Read instructions and get ready to cook

1
Prepare the chicken

Pat drumsticks dry with paper towels. Season with salt and pepper.

2
Brown the chicken

Heat oil in a large pot over medium-high heat. Add drumsticks and brown on all sides, about 5 minutes. Remove and set aside.

3
Prepare the vegetables

Peel and dice the onion. Peel and slice the carrots. Mince the garlic. Core and roughly chop the cabbage.

4
Sauté the aromatics

Add onion to the same pot. Cook for 3-4 minutes until softened. Add garlic and cook for 30 seconds until fragrant.

5
Add liquid and chicken

Pour water into the pot. Add bay leaf, remaining salt and pepper. Return browned chicken to the pot. Bring to a boil, then reduce to a simmer.

6
Cook the chicken

Cover and simmer for 25 minutes until chicken is tender.

7
Add vegetables

Add sliced carrots to the pot. Simmer for 5 minutes. Add chopped cabbage. Continue simmering for 10-15 minutes until cabbage is tender.

8
Check seasoning

Taste the broth and adjust salt and pepper if needed.

9
Serve

Remove bay leaf. Ladle soup into bowls, ensuring each serving has a drumstick. Serve hot.
