Read instructions and get ready to cook
Prepare the chicken
Cut chicken into thin strips. Place in a bowl.
Season the chicken
Add olive oil and seasonings to the chicken. Toss to coat evenly. Let marinate for 10 minutes.
Prepare the vegetables
Wash bell peppers. Remove stems and seeds. Slice peppers into thin strips. Peel onion and slice into thin strips.
Cook the chicken
Heat a large skillet or grill pan over medium-high heat. Add chicken strips. Cook for 5-7 minutes, stirring occasionally, until chicken is cooked through. Remove from pan and set aside.
Cook the vegetables
In the same pan, add another tablespoon of olive oil. Add sliced peppers and onions. Cook for 5-6 minutes until vegetables are tender-crisp and slightly charred. Season with remaining cumin, chili powder, salt, and pepper.
Prepare the salad base
Wash and dry lettuce. Tear or chop into bite-sized pieces. Wash tomatoes and cut into wedges. Arrange lettuce on a large platter or individual plates. Top with tomato wedges.
Make the dressing
Cut lime in half and squeeze to extract juice. In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
Assemble the salad
Place cooked chicken strips over the lettuce. Arrange the sautéed peppers and onions on top.
Finish and serve
Drizzle with the lime dressing. Serve immediately.
