Prepare the chicken

Trim any excess fat from the chicken breasts. Season both sides of the chicken with salt and black pepper. Dredge the chicken breasts in the all-purpose flour, shaking off any excess.

Cook the chicken

Heat the olive oil and butter in a large skillet over medium-high heat. Add the floured chicken breasts and cook for 4-5 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Prepare the sauce ingredients

Juice the lemons. Mince the garlic cloves. Remove the leaves from the thyme sprigs.

Make the lemon sauce

In the same skillet, add the minced garlic and sauté for 30 seconds. Pour in the chicken broth and lemon juice. Add the thyme leaves. Bring the sauce to a simmer and cook for 2-3 minutes, stirring occasionally, until slightly thickened.

Return the cooked chicken breasts to the skillet. Spoon the lemon sauce over the chicken. Reduce the heat to low and simmer for 2-3 minutes, or until the chicken is heated through and the flavors have melded.
