Prepare the meatball ingredients
Chop 1/4 of the onion finely. Mince 2 cloves of garlic. In a large bowl, combine the ground chicken, breadcrumbs, chopped onion, minced garlic, egg, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix well.
Form the meatballs
Using wet hands, shape the chicken mixture into 1-inch meatballs. Place the meatballs on a plate and set aside.
Prepare the soup ingredients
Chop the remaining onion, carrots, and celery. Mince the remaining garlic.
Sauté the vegetables
In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, celery, and minced garlic. Sauté for 5-7 minutes, or until the vegetables are softened.
Add the broth and seasonings
Pour in the chicken broth. Add the dried oregano, 1 teaspoon salt, and 1/4 teaspoon black pepper. Bring the soup to a boil.
Add the meatballs
Carefully drop the meatballs into the boiling soup. Reduce the heat to low and simmer, uncovered, for 25-30 minutes, or until the meatballs are cooked through and the vegetables are tender.
Serve
Ladle the Chicken Meatballs Soup into bowls and serve hot.
