Cook the lasagna noodles

Bring a large pot of salted water to a boil. Cook the lasagna noodles according to the package instructions until al dente. Drain the noodles and lay them flat on a baking sheet to prevent sticking.

Cook the chicken

In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook until browned and cooked through, about 6-8 minutes per side. Remove the chicken from the skillet and let it cool slightly.

Using two forks, shred the cooked chicken into small pieces.

In a large bowl, mix the ricotta cheese, 1/2 cup of Parmesan cheese, eggs, salt, and black pepper until well combined. Stir in the shredded chicken.

Mince the garlic cloves. In a saucepan, heat the remaining olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Pour in the tomato sauce and stir in the Italian seasoning, remaining salt, and black pepper. Simmer the sauce for 5 minutes.

Spread a thin layer of the tomato sauce in a 9x13-inch baking dish. Lay a cooked lasagna noodle flat and spread a spoonful of the ricotta mixture evenly over the noodle. Roll up the noodle tightly and place it seam-side down in the prepared baking dish. Repeat with the remaining noodles and ricotta mixture.

Pour the remaining tomato sauce over the roll-ups, making sure they are well coated. Sprinkle the shredded mozzarella cheese and remaining Parmesan cheese evenly over the top.
