Prepare the Chicken
Cut 1 lb of chicken breast into bite-sized pieces, about 1 inch in size.
Beat the Eggs
In a shallow dish, beat 2 whole eggs until well mixed.
Mix Dry Ingredients
In another shallow dish, combine 1 cup of all-purpose flour, 1 teaspoon of paprika, 1 teaspoon of garlic powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
Prepare Breadcrumbs
Place 1 cup of breadcrumbs in a third shallow dish.
Coat the Chicken
Dip each chicken piece first in the flour mixture, then in the beaten eggs, and finally coat with breadcrumbs.
Fry the Chicken
Heat vegetable oil in a deep fryer or large pan to 350°F (175°C). Fry the chicken pieces in batches until golden brown and cooked through, about 3-4 minutes per batch.
Serve
