Brown chicken

Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the chicken thighs and cook for 6-8 minutes, turning occasionally, until browned on all sides. Remove the chicken from the pot and set aside.

Chop vegetables

While the chicken is browning, peel and chop the onions and carrots. Remove the seeds and stems from the bell peppers and chop them into bite-sized pieces. Cut the tomatoes into chunks. Peel and mince the garlic cloves.

Sauté vegetables

In the same pot, add the chopped onions, carrots, and bell peppers. Sauté for 5-7 minutes or until the vegetables start to soften.

Add tomatoes and seasonings

Add the chopped tomatoes, minced garlic, tomato paste, paprika, dried thyme, bay leaves, salt, and black pepper to the pot. Stir to combine.

Return chicken to pot

Return the browned chicken thighs to the pot, nestling them among the vegetables.

Add broth and simmer

Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let the stew simmer for 1 hour or until the chicken is tender and cooked through.

Remove bay leaves

Remove the bay leaves from the stew and discard them.
