Prepare the chicken
Cut 1 pound of boneless, skinless chicken breast into 1-inch pieces. Season the chicken with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
Prepare the broccoli
Cut 1 large head of broccoli into bite-sized florets.
Prepare the garlic and ginger
Mince 3 cloves of garlic and grate 1 inch of fresh ginger.
Make the sauce
In a small bowl, whisk together 1/4 cup of soy sauce, 1 tablespoon of cornstarch, and 1/4 cup of water until smooth.
Cook the chicken
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and stir-fry for 5-7 minutes, or until cooked through. Remove the chicken from the skillet and set aside.
Cook the broccoli
In the same skillet, heat the remaining 1 tablespoon of vegetable oil. Add the broccoli and stir-fry for 3-4 minutes, or until crisp-tender.
Add garlic and ginger
Add the minced garlic and grated ginger to the skillet with the broccoli. Stir-fry for 1-2 minutes, or until fragrant.
Add sauce and chicken
Pour the sauce into the skillet and bring it to a simmer. Return the chicken to the skillet and stir to coat with the sauce. Cook for 1-2 minutes, or until the sauce has thickened and the chicken is heated through.
Serve
Serve the chicken with broccoli hot, over steamed rice or noodles, if desired.
