Prepare the chicken
Season the chicken thighs with salt and black pepper on both sides.
Prepare the vegetables
Roughly chop the olives. Chop the tomatoes. Peel and finely chop the onion. Peel and mince the garlic cloves.
Brown the chicken
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken thighs and brown them on both sides, about 3-4 minutes per side. Transfer the chicken to a plate.
Sauté the vegetables
Heat the remaining 1 tablespoon of olive oil in the same skillet. Add the chopped onion and minced garlic. Sauté for 3-4 minutes or until the onion is softened.
Add liquids and seasonings
Return the chicken to the skillet with the vegetables. Add the chopped tomatoes, olives, chicken broth, thyme, rosemary, and the remaining salt and black pepper. Stir to combine.
Simmer and add lemon
Bring the mixture to a simmer, then reduce heat to low and let it cook, covered, for 30-35 minutes or until the chicken is cooked through and tender. Zest and juice the lemon, then add the zest and juice to the skillet. Stir to combine.
Serve
Serve the Chicken with Olives hot over rice, pasta, or with crusty bread to soak up the flavorful sauce.
