Read instructions and get ready to cook

Cook the pasta

Bring a large pot of salted water to a boil. Add 8 ounces of penne pasta and cook according to the package instructions until al dente. Drain the pasta, reserving 1/2 cup of the cooking water.

Prepare the chicken

Cut 1 pound of boneless, skinless chicken breast into 1-inch pieces. Season the chicken with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.

Prepare the tomatoes and garlic

Halve 2 cups of cherry tomatoes and mince 4 cloves of garlic.

Prepare the basil

Roughly chop 1 cup of fresh basil leaves.

Cook the chicken

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the seasoned chicken pieces and sauté for 5-7 minutes, or until cooked through and lightly browned. Remove the chicken from the skillet and set aside.

Sauté the garlic

In the same skillet, add the minced garlic and sauté for 1-2 minutes, or until fragrant.

Combine the ingredients

Add the cooked pasta, halved cherry tomatoes, and reserved pasta cooking water to the skillet with the garlic. Toss to combine and cook for 1-2 minutes, or until the tomatoes are slightly softened.

Add the chicken and basil

Return the cooked chicken to the skillet and add the chopped basil. Toss to combine and cook for an additional 1-2 minutes, or until heated through.

Add the cheese and season

Remove the skillet from the heat and stir in 1/2 cup of grated Parmesan cheese. Season with the remaining 1/2 teaspoon of salt and 1/4 teaspoon of black pepper, or to taste.

Serve

Serve the chicken with pasta and tomatoes hot, garnished with additional Parmesan cheese and fresh basil leaves, if desired.
