Prepare the Pork
Cut pork shoulder into long strips about 2 inches thick.
Mince the Garlic
Peel and mince garlic cloves.
Make the Marinade
In a large bowl, combine hoisin sauce, soy sauce, honey, sugar, rice wine, five-spice powder, minced garlic, food coloring (if using), salt, and sesame oil.
Marinate the Pork
Add pork strips to the marinade and toss to coat evenly. Cover and refrigerate for at least 12 hours, preferably 24 hours, turning occasionally.
Prepare for Roasting
Preheat oven to 425°F (220°C). Line a baking sheet with foil and place a wire rack on top.
Arrange the Pork
Remove pork from marinade, reserving the marinade. Place pork strips on the wire rack.
Roast the Pork
Roast for 20 minutes, then flip the pork strips.
Prepare Basting Sauce
While pork is roasting, pour reserved marinade into a small saucepan. Add remaining 1 tablespoon honey and bring to a boil. Simmer for 1-2 minutes until slightly thickened.
Baste and Continue Roasting
Brush pork with the reduced marinade and continue roasting for another 15-20 minutes, basting every 5 minutes, until pork is caramelized and internal temperature reaches 145°F (63°C).
Rest the Pork
Remove from oven and let rest for 10 minutes.
Slice the Pork
Cut pork into thin slices across the grain.
Serve
Serve warm with rice or use in other dishes like noodle soups or bao buns.
