Prepare the rice
If using leftover rice, break up any clumps with your hands. If using freshly cooked rice, spread it out on a baking sheet and let it cool for 10-15 minutes.
Prepare the chicken
Cut the boneless, skinless chicken breasts into bite-sized pieces, about 1/2-inch cubes.
Prepare the vegetables
Peel and dice the carrots. Thinly slice the green onions, separating the white and green parts. Mince the garlic cloves and grate the ginger.
Cook the eggs
In a large wok or skillet, heat 1 tablespoon of vegetable oil over medium heat. Crack the eggs into the skillet and scramble until cooked through. Transfer the scrambled eggs to a plate and set aside.
Cook the chicken
In the same wok or skillet, heat the remaining 1 tablespoon of vegetable oil over medium-high heat. Add the chicken pieces and cook, stirring occasionally, until browned and cooked through, about 5-7 minutes. Transfer the chicken to a plate and set aside.
Sauté the aromatics
Add the minced garlic, grated ginger, and white parts of the green onions to the wok or skillet. Stir-fry for 30 seconds, or until fragrant.
Add the vegetables
Add the diced carrots and frozen peas to the wok or skillet. Stir-fry for 2-3 minutes, or until the vegetables are tender-crisp.
Add the rice and seasonings
Add the cooked rice, soy sauce, sesame oil, salt, and black pepper to the wok or skillet. Stir-fry for 2-3 minutes, or until the rice is heated through and well combined with the vegetables and seasonings.
Add the eggs and chicken
Return the scrambled eggs and cooked chicken to the wok or skillet. Stir-fry for 1-2 minutes, or until everything is heated through and well combined.
Garnish and serve
Transfer the Chinese chicken fried rice to a serving dish and garnish with the green parts of the sliced green onions. Serve hot.
