Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
Drain and rinse the chickpeas.
In a food processor, process the chickpeas until smooth.
Add the peanut butter, maple syrup, cocoa powder, baking soda, and vanilla extract to the food processor. Process until well combined.
Transfer the batter to a bowl. Stir in the dark chocolate chips.
Using a spoon or cookie scoop, drop rounded tablespoons of the dough onto the prepared baking sheet, about 1-2 inches apart.
Bake for 10-12 minutes, until the edges are set and the tops look dry.
Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. Enjoy!
