Prepare the crust
Crush cookies into fine crumbs. Melt butter. Mix cookie crumbs and melted butter until combined. Press into the bottom of a lined 8x8 inch baking pan.
Preheat the oven
Preheat oven to 325°F (165°C).
Make the cheesecake filling
In a large bowl, beat cream cheese until smooth. Add sugar and beat until combined. Add eggs one at a time, beating after each addition. Stir in vanilla and salt.
Bake the cheesecake
Pour filling over the crust. Smooth the top with a spatula. Bake for 35-40 minutes until center is almost set. Edges may be slightly puffed.
Cool the cheesecake
Let cool at room temperature for 1 hour. Refrigerate for at least 2 hours or overnight.
Cut into bites
Remove cheesecake from pan using the liner. Cut into 24 squares (about 1.5 inches each). Place on a parchment-lined baking sheet. Freeze for 30 minutes to firm up for dipping.
Prepare the chocolate coating

Dip the cheesecake bites
Working with a few pieces at a time, dip frozen cheesecake squares into melted chocolate. Use a fork to lift out, allowing excess chocolate to drip off. Place on parchment paper.
Set the chocolate
Let chocolate set at room temperature. For faster setting, refrigerate for 10-15 minutes.
