Steps

Read instructions and get ready to cook

1
Preheat oven and prepare muffin tin

Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease with cooking spray.

2
Pit and soak dates

Remove the pits from the dates and soak them in hot water for 10 minutes to soften. Drain the water.

3
Blend dates and wet ingredients

In a blender or food processor, blend the soaked dates, eggs, and vanilla extract until smooth.

4
Mix dry ingredients

In a separate bowl, whisk together the whole wheat flour, cocoa powder, baking soda, and salt.

5
Combine wet and dry ingredients

Pour the wet date mixture into the dry ingredients and mix until just combined. Do not overmix.

6
Fold in chocolate chips

Gently fold in the dark chocolate chips.

7
Fill muffin cups and bake

Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

8
Cool and serve

Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
