Preheat the oven and prepare ramekins
Preheat the oven to 425°F (220°C). Grease 4 (6-ounce) ramekins with butter and dust with cocoa powder, tapping out the excess.
Melt chocolate and butter
In a microwave-safe bowl, combine 6 ounces of bittersweet chocolate and 1/2 cup of unsalted butter. Microwave in 30-second intervals, stirring between each interval, until the chocolate and butter are melted and smooth.
Whisk eggs and sugar
In a separate bowl, whisk together 2 large eggs, 2 large egg yolks, and 1/4 cup of granulated sugar until well combined.
Combine ingredients
Slowly pour the melted chocolate mixture into the egg mixture, whisking constantly to combine. Sift in 1/4 cup of all-purpose flour and 1/8 teaspoon of salt, and whisk until just incorporated.
Fill ramekins and bake
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full. Place the ramekins on a baking sheet and bake for 10-12 minutes, or until the edges are set and the centers are still slightly jiggly.
Cool and serve
Remove the ramekins from the oven and let the cakes cool for 1-2 minutes. Run a knife around the edges of each cake to loosen, then carefully invert onto serving plates. Serve the lava cakes warm, dusted with powdered sugar or topped with a scoop of vanilla ice cream, if desired.
