Prepare the Pan
Line an 8x8 inch baking pan with parchment paper, leaving overhang on the sides for easy removal.
Crush the Graham Crackers
Place graham crackers in a ziplock bag and crush into fine crumbs using a rolling pin, or pulse in a food processor.
Melt Butter
In a microwave-safe bowl, melt butter.
Make the Base Layer
In a large bowl, combine graham cracker crumbs, peanut butter, melted butter, powdered sugar, and vanilla extract. Mix until well combined.
Press into Pan
Press the peanut butter mixture firmly and evenly into the bottom of the prepared pan.
Chill Base Layer
Refrigerate the base layer for 30 minutes until firm.
Prepare Caramel Layer
If using store-bought caramel sauce, warm slightly to make it easier to spread. If too thick, stir in 1-2 tablespoons of cream or milk.
Add Salt to Caramel
Stir salt into the caramel sauce.
Spread Caramel Layer
Remove the pan from the refrigerator and pour the caramel sauce over the peanut butter layer, spreading evenly.
Chill Caramel Layer
Return the pan to the refrigerator for another 30 minutes until caramel is set.
Melt Chocolate
Place chocolate chips and remaining peanut butter in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until completely melted and smooth.
Spread Chocolate Layer
Pour the melted chocolate mixture over the caramel layer and spread evenly.
Final Chilling
Refrigerate for at least 1 hour until completely set.
Remove from Pan
Use the parchment paper overhang to lift the bars out of the pan and place on a cutting board.
Cut into Squares
With a sharp knife, cut into 16 squares. For clean cuts, wipe the knife with a warm, damp cloth between cuts.
Serve
Serve chilled or at room temperature.
