Steps
Read instructions and get ready to cook
Chop and Mince
Chop bell peppers, zucchini, and red onion into bite-size pieces. Mince garlic. Roughly chop cilantro.
Cook the Rice
Rinse brown rice and cook according to package instructions. Set aside.
Make Marinade
In a bowl, mix lime juice, 2 tbsp olive oil, half the chopped cilantro, garlic, cumin, paprika, salt, and pepper.
Marinate the Chicken
Cut chicken into strips. Add to marinade. Let sit for 15–30 minutes.
Roast the Veggies
Toss chopped veggies with 1 tbsp olive oil and a pinch of salt. Roast at 400°F for 20 minutes.
Cook the Chicken
Heat a grill pan or skillet. Grill chicken pieces for 4–5 minutes per side until fully cooked.
Assemble Meal Prep Bowls
Divide rice, roasted veggies, and grilled chicken into 4 containers. Top with remaining cilantro.
