Rinse the rice under cold running water until the water runs clear.
In a medium saucepan, combine the rinsed rice and water. Bring to a boil over high heat, then reduce heat to low, cover, and simmer until the rice is tender and has absorbed the water, about 15-20 minutes.
While the rice cooks, finely chop the cilantro leaves and stems. Zest and juice the limes.
When the rice is done, remove the saucepan from heat and let it stand, covered, for 5 minutes. Fluff the rice with a fork.
Add the chopped cilantro, lime zest, lime juice, olive oil, and salt to the rice. Stir until the ingredients are evenly distributed.
Transfer the cilantro rice to a serving bowl and serve hot as a side dish.
