Preheat Oven

Preheat your oven to 250°F (120°C). Line a baking sheet with parchment paper.

Mix Dry Ingredients

In a bowl, combine 1/2 cup of granulated sugar, 2 teaspoons of ground cinnamon, and 1/4 teaspoon of salt. Set aside.

Prepare Egg Mixture

In a separate large bowl, whisk together 1 whole egg white, 1 tablespoon of water, and 1 teaspoon of vanilla extract until frothy.

Coat Almonds

Add 2 cups of almonds to the egg mixture and stir until the almonds are evenly coated. Then, add the sugar-cinnamon mixture to the almonds and stir until the almonds are well coated.

Spread the coated almonds in a single layer on the prepared baking sheet. Bake in the preheated oven for 45 minutes, stirring every 15 minutes to ensure even roasting.
