Preheat Oven
Preheat your oven to 250°F (120°C). Line a baking sheet with parchment paper.
Mix Dry Ingredients
In a bowl, combine 1/2 cup of granulated sugar, 2 teaspoons of ground cinnamon, and 1/4 teaspoon of salt. Set aside.
Prepare Egg Mixture
In a separate large bowl, whisk together 1 whole egg white, 1 tablespoon of water, and 1 teaspoon of vanilla extract until frothy.
Coat Almonds
Add 2 cups of almonds to the egg mixture and stir until the almonds are evenly coated. Then, add the sugar-cinnamon mixture to the almonds and stir until the almonds are well coated.
Bake
Spread the coated almonds in a single layer on the prepared baking sheet. Bake in the preheated oven for 45 minutes, stirring every 15 minutes to ensure even roasting.
Cool and Serve
Remove the almonds from the oven and let them cool completely on the baking sheet. They will become crunchier as they cool. Serve the cinnamon almonds as a snack or store in an airtight container for later enjoyment.
