Prepare oven and baking sheets

Preheat oven to 325°F (165°C). Line two baking sheets with parchment paper.

Combine ingredients

In a large bowl, mix together the shredded coconut, sweetened condensed milk, and vanilla extract until well combined.

Add eggs and salt

In a separate small bowl, whisk the eggs with the salt. Add the egg mixture to the coconut mixture and stir until fully incorporated.

Scoop macaroons

Using a small cookie scoop or two spoons, scoop mounds of the coconut mixture (about 1 1/2 tablespoons each) onto the prepared baking sheets, spacing them about 1 inch apart.

Bake

Bake in the preheated oven for 23-25 minutes, until lightly golden brown around the edges. Let cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
