Steps

Read instructions and get ready to cook

1
Prepare espresso

Brew 2/3 cup of strong espresso or coffee and let it cool to room temperature.

2
Mix milk, cream, and sugar

In a saucepan over medium heat, combine milk, heavy cream, and granulated sugar. Stir until the sugar dissolves and the mixture is warm, then remove from heat.

3
Temper egg yolks

In a separate bowl, whisk the egg yolks. Gradually whisk in half of the warm milk mixture to temper the yolks.

4
Combine with remaining milk mixture

Return the egg mixture to the saucepan with the remaining milk mixture. Cook over low heat, stirring constantly until the mixture thickens enough to coat the back of a spoon.

5
Add coffee

Remove from heat and stir in the cooled espresso or coffee. Espresso or strong brewed coffee, 2/3 cup.

6
Chill

Transfer the mixture to a bowl and let it cool. Then, cover and refrigerate for at least 4 hours, until thoroughly chilled.

7
Churn

Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft, creamy texture.

8
Freeze

Transfer the gelato to a container and freeze for at least 1 hour to firm up before serving.
