Make the cookie dough

In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. In a large bowl, beat the unsalted butter and granulated sugar until light and fluffy. Divide the dough into two equal portions. Shape each portion into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes, or until firm.

Preheat the oven to 375°F (190°C). Line baking sheets with parchment paper.

Cut out the cookies

On a lightly floured surface, roll out one portion of the chilled dough to about 1/4-inch thickness. Using star-shaped cookie cutters of varying sizes, cut out an equal number of stars for each size. Place the stars on the prepared baking sheets.

Bake the cookies for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let the cookies cool on the baking sheets for 5 minutes, then transfer them to wire racks to cool completely.
