Crush the cookies

Separate 15 Oreo cookies and scrape off the cream filling. Crush the cookie pieces into small crumbs using a food processor or by placing them in a plastic bag and rolling over them with a rolling pin. Set aside.

Cook the condensed milk mixture

In a medium saucepan, combine the sweetened condensed milk, unsalted butter, and cocoa powder. Cook over medium heat, stirring constantly, until the mixture thickens and pulls away from the sides of the pan, about 10-12 minutes.

Add vanilla and cookie pieces

Remove the saucepan from the heat and stir in the vanilla extract. Roughly chop the remaining 5 Oreo cookies and stir them into the condensed milk mixture.

Chill the mixture

Pour the mixture into a greased dish and let it cool at room temperature for 10 minutes. Cover the dish with plastic wrap and refrigerate for 30 minutes or until the mixture is firm enough to handle.

Shape the brigadeiros

Using a spoon or a small cookie scoop, scoop out small portions of the mixture and roll them into balls using your hands.

Coat the brigadeiros

Roll each ball in the crushed Oreo cookie crumbs until evenly coated. Place the coated brigadeiros on a baking sheet lined with parchment paper. Decorate with sprinkles, if desired.

Chill and serve

Refrigerate the Cookies & Cream Brigadeiros for at least 30 minutes before serving. Store any leftover brigadeiros in an airtight container in the refrigerator for up to 5 days.
