Cut beef
Cut the beef chuck into 1-inch cubes, removing any excess fat.
Chop vegetables
Peel and chop the onions, potatoes, and carrots into bite-sized pieces. Remove the seeds and stems from the bell peppers and chop them into 1-inch pieces. Chop the tomatoes into small chunks. Peel and mince the garlic cloves.
Heat oil
In a large pot or Dutch oven, heat the olive oil over medium-high heat.
Brown beef
Add the beef cubes to the pot and cook, stirring occasionally, for 6-8 minutes or until browned on all sides.
Add onions and garlic
Add the chopped onions and minced garlic to the pot. Sauté for 5 minutes or until the onions are softened and translucent.
Add vegetables and spices
Add the chopped potatoes, carrots, bell peppers, and tomatoes to the pot. Stir in the paprika, bay leaves, salt, and black pepper.
Add broth
Pour in the beef broth and stir to combine.
Bring to a boil
Bring the stew to a boil over high heat. Reduce the heat to low, cover the pot, and let the stew simmer for 2-2.5 hours or until the beef is tender and the vegetables are cooked through.
Remove bay leaves
Remove the bay leaves from the pot and discard them.
Serve
Serve the Balkan Country Stew hot, accompanied by crusty bread for dipping.
