Cook cranberries and orange
In a saucepan, combine the cranberries, zest and juice of 1 orange, and 1/2 cup of sugar. Cook over medium heat, stirring occasionally, until the cranberries burst and the mixture thickens, about 10 minutes.
Strain cranberry mixture
Press the cranberry mixture through a fine-mesh sieve into a bowl, discarding the solids. Let cool to room temperature.
Prepare gelatin
In a small bowl, sprinkle the gelatin over 1/4 cup of cold water. Let stand for 5 minutes.
Melt gelatin
Heat the gelatin mixture in the microwave for 10-15 seconds, or until melted. Stir into the cooled cranberry mixture.
Whip cream
In a large bowl, whip the heavy cream until stiff peaks form.
Prepare egg mixture
In another bowl, beat the egg yolks with the remaining 1/2 cup of sugar until light and fluffy. Gradually stir in the cranberry mixture.
Fold in whipped cream
Gently fold the whipped cream into the cranberry and egg mixture until well combined.
Prepare orange segments
Peel and segment the remaining orange.
Chill the mousse
Divide the mousse among 6 serving glasses. Chill in the refrigerator for at least 2 hours, or until set.
Serve
Top each mousse with orange segments before serving.
