Read instructions and get ready to cook
Cook the pasta
Bring a large pot of salted water to a boil. Add 16 oz of penne pasta and cook according to package instructions until al dente. Drain the pasta, reserving 1/2 cup of the cooking water.
Prepare the chicken
While the pasta cooks, cut 1 lb of boneless, skinless chicken breasts into bite-sized pieces. Season with 1 tablespoon of Cajun seasoning.
Cook the chicken
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken pieces and cook for 6-8 minutes, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
Prepare the vegetables
Dice 1 red bell pepper, 1 yellow bell pepper, and 1 onion. Mince 4 garlic cloves.
Sauté the vegetables
In the same skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the diced bell peppers, onion, and minced garlic. Sauté for 5-6 minutes, or until the vegetables are softened.
Prepare the sauce
In the skillet with the vegetables, add 1/4 cup of all-purpose flour and the remaining 1 tablespoon of Cajun seasoning. Stir to combine and cook for 1-2 minutes. Gradually whisk in 2 cups of chicken broth and 1 cup of heavy cream. Simmer for 3-4 minutes, or until the sauce thickens slightly.
Add cheese and seasonings
Reduce the heat to low and stir in 1/2 cup of grated Parmesan cheese, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Whisk until the cheese is melted and the sauce is smooth.
Combine ingredients
Add the cooked chicken and pasta to the skillet with the sauce. Toss to coat evenly, adding some of the reserved pasta cooking water if needed to thin the sauce.
