Prepare the vegetables
Finely chop the onion, mince the garlic cloves, and grate the ginger.
Prepare the pork
Cut the pork shoulder into 1-inch cubes and season with salt and black pepper.
Brown the pork
Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Add the pork cubes and cook, turning occasionally, until browned on all sides, about 6-8 minutes. Remove the pork and set it aside.
Sauté the vegetables
In the same pot, add the chopped onion, minced garlic, and grated ginger. Sauté until the onions are softened and fragrant, about 5 minutes.
Add curry paste
Stir in the red curry paste and cook for 1-2 minutes until fragrant.
Add liquids and seasonings
Pour in the coconut milk, chicken broth, fish sauce, and brown sugar. Stir to combine and bring the mixture to a simmer.
Simmer the curry
Return the browned pork to the pot and stir to coat with the sauce. Reduce the heat to low, cover the pot, and simmer for 1 to 1 1/2 hours, or until the pork is tender.
Prepare the herbs
Finely chop the fresh cilantro leaves and cut the lime into wedges.
Finish the curry
Stir in the chopped cilantro and a squeeze of lime juice. Taste and adjust the seasoning if needed.
Serve
Serve the creamy pork curry hot over steamed rice, garnished with additional cilantro and lime wedges on the side. Enjoy!
