Prepare the pork
Cut the pork shoulder into 1-inch cubes. Season the pork with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
Prepare the vegetables
Peel and cut the potatoes into 1-inch cubes. Peel and slice the carrots into 1/2-inch rounds. Chop the onion into 1/2-inch pieces. Mince the garlic cloves.
Brown the pork
In a large Dutch oven or heavy-bottomed pot, heat 1 tablespoon of olive oil over medium-high heat. Add the pork cubes and cook until browned on all sides, about 5-7 minutes. Remove the pork from the pot and set aside.
Cook the vegetables
In the same pot, add the remaining 1 tablespoon of olive oil. Add the chopped onion and minced garlic. Cook until the onion is softened, about 5 minutes. Stir in the all-purpose flour and cook for 1 minute.
Add the broth and seasonings
Gradually whisk in the chicken broth, making sure to scrape up any browned bits from the bottom of the pot. Add the dried thyme, dried rosemary, bay leaf, and the remaining 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Bring the mixture to a simmer.
Add the pork and vegetables
Return the browned pork to the pot, along with the cubed potatoes and sliced carrots. Stir to combine and bring the stew back to a simmer. Reduce the heat to low, cover the pot, and let the stew simmer for 1 hour, or until the pork and vegetables are tender.
Add the cream and serve
Remove the bay leaf from the stew. Stir in the heavy cream and let the stew simmer for an additional 5 minutes. Serve the Creamy Pork Stew hot, garnished with fresh herbs if desired.
