Read instructions and get ready to cook
Cook the pasta
Bring a large pot of water to a boil. Add salt and pasta. Cook according to package directions until al dente. Drain, reserving 1/2 cup of pasta water.
Prepare the shrimp
Peel and devein shrimp if not already done. Pat dry with paper towels. Season with salt and pepper.
Prepare the aromatics
Finely dice the onion. Mince the garlic.
Cook the shrimp
Heat oil in a large skillet over medium-high heat. Add shrimp in a single layer. Cook for 1-2 minutes per side until pink and opaque. Remove shrimp from pan and set aside.
Make the sauce base
Add remaining oil and butter to the same skillet. Add diced onion and cook until softened, about 3-4 minutes. Add minced garlic and cook for 30 seconds until fragrant.
Add tomatoes
Add canned tomatoes with their juice. Break up tomatoes with a spoon if using whole tomatoes. Season with salt and pepper. Simmer for 5 minutes until slightly reduced.
Add cream
Stir in cream. Simmer gently for 3-4 minutes until sauce thickens slightly. Do not boil.
Combine pasta and sauce
Add cooked pasta to the sauce. Toss to coat, adding a splash of reserved pasta water if needed to loosen the sauce.
Add shrimp
Return cooked shrimp to the pan. Gently fold into the pasta and sauce. Heat through for 1-2 minutes.
Serve
Divide among four plates. Serve immediately.
