Read instructions and get ready to cook
Prepare sushi rice
Mix cooked sushi rice with rice vinegar, sugar, and salt. Let cool to room temperature.
Prepare fillings
Slice cooked chicken breast, cucumber, and avocado.
Lay out nori
Place a sheet of nori on a cutting board or bamboo mat, shiny side down.
Add rice layer
Spread a square of sushi rice (about 1 cup) in the center of the nori, leaving borders around the edges.
Add fillings
Layer lettuce, chicken, cucumber, and avocado slices on top of the rice.
Add condiments
Drizzle mayonnaise and soy sauce over the fillings.
Add top rice layer
Spread another layer of rice on top of the fillings.
Fold nori
Fold the nori over the filling from all four sides, like wrapping a gift.
Seal the onigirazu
Gently press down to seal the edges of the nori. The moisture from the rice will help it stick.
Cut and serve
Using a sharp knife, cut the onigirazu in half diagonally. Serve immediately or wrap in plastic for later.
