Read instructions and get ready to cook
Prepare filling
Finely chop Napa cabbage, green onions, garlic, and ginger.
Mix filling
In a bowl, combine ground pork, chopped vegetables, soy sauce, sesame oil, white pepper, and salt.
Fill dumplings
Place a small spoonful of filling in the center of each wrapper.
Seal dumplings
Wet the edges of the wrapper with water, fold in half, and pinch to seal, creating pleats if desired.
Heat oil
In a large skillet, heat vegetable oil over medium-high heat.
Fry dumplings
Carefully place dumplings in the hot oil, not overcrowding the pan.
Cook bottom
Fry for 2-3 minutes until the bottom is golden brown.
Add water
Carefully add 2 tablespoons of water to the pan and immediately cover with a lid.
Steam dumplings

Crisp up

Drain
Remove dumplings and place on a paper towel-lined plate to drain excess oil.
Repeat
Continue frying remaining dumplings in batches.
Prepare dipping sauce
In a small bowl, mix rice vinegar, soy sauce, and sesame oil.
Arrange
Place crispy dumplings on a serving platter.
Serve
Serve hot with the prepared dipping sauce on the side.
