Read instructions and get ready to cook
Prepare onions
Peel and thinly slice the onions into half-moons.
Make batter
In a large bowl, mix chickpea flour, cumin seeds, turmeric powder, red chili powder, salt, and baking soda.
Add water
Gradually add water to the dry ingredients, whisking to form a thick batter.
Mix onions
Add sliced onions to the batter and mix well to coat evenly.
Heat oil
In a deep frying pan or wok, heat vegetable oil to 350°F (175°C).
Form bhajis
Take a small handful of battered onions and gently drop into the hot oil.
Fry bhajis
Fry for 2-3 minutes until golden brown and crispy.
Turn bhajis
Carefully flip the bhajis and fry for another 1-2 minutes.
Remove and drain
Remove bhajis with a slotted spoon and drain on paper towels.
Repeat
Continue frying in batches until all batter is used.
Serve
Serve hot with mint chutney or tamarind sauce.
