Prepare the shrimp
Peel and devein the shrimp, leaving tails intact. Pat dry thoroughly with paper towels.
Prepare the egg
Crack the egg into a bowl. Beat lightly.
Prepare the coating
In a shallow dish, combine cornstarch, salt, white pepper, black pepper, and five-spice powder. Mix well.
Prepare the garlic
Peel the garlic cloves. Mince finely.
Prepare the jalapeño
Remove stem and seeds. Dice finely.
Prepare the green onions
Wash thoroughly. Slice thinly, separating white and green parts.
Coat the shrimp
Dip each shrimp into the beaten egg. Dredge in the cornstarch mixture, shaking off excess. Place on a plate in a single layer.
Heat the oil
In a large, deep skillet or wok, heat oil to 350°F (175°C). Use a thermometer to monitor temperature.
Fry the shrimp
Working in batches, carefully add shrimp to the hot oil. Fry for 2-3 minutes until golden and crispy. Do not overcrowd the pan.
Drain the shrimp
