Prepare the muffin tin
Line a 12-cup mini muffin tin with paper liners.
Prepare the chocolate
Chop the dark chocolate into small pieces for even melting.
Melt the chocolate
Place 3/4 of the chopped chocolate in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until melted.
Temper the chocolate (optional)
Add the remaining 1/4 of chopped chocolate to the melted chocolate. Stir until completely melted and smooth. This helps the chocolate set with a snap and glossy finish.
Create chocolate shells
Spoon about 1 teaspoon of melted chocolate into each paper liner. Using the back of the spoon or a small brush, push the chocolate up the sides of the liner to form a cup. Make sure there are no bare spots.
Chill the shells
Place the muffin tin in the refrigerator for 10 minutes to set the chocolate.
Prepare the filling
In a small bowl, mix peanut butter, powdered sugar, salt, and vanilla extract. Stir until completely combined and smooth.
Fill the chocolate cups
Remove the muffin tin from the refrigerator. Place about 1 teaspoon of the peanut butter mixture into each chocolate cup. Gently press down to flatten, leaving some space at the top for the chocolate seal.
Seal with chocolate
Spoon about 1 teaspoon of the remaining melted chocolate over each peanut butter filling. Make sure the filling is completely covered. Gently tap the muffin tin on the counter to smooth the chocolate.
Chill to set
Return the muffin tin to the refrigerator for at least 30 minutes until completely set.
Remove from liners
Once set, carefully peel away the paper liners from each chocolate cup.
