Read instructions and get ready to cook
Preheat Oven
Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
Mix Dry Ingredients
In a bowl, sift together 2 cups of all-purpose flour, 3/4 cup of cocoa powder, 2 teaspoons of baking powder, and 1/2 teaspoon of salt.
Cream Butter and Sugar
In another bowl, cream together 1/2 cup of unsalted butter and 1 cup of granulated sugar until light and fluffy.
Add Eggs and Vanilla
Beat in 2 eggs, one at a time, into the butter mixture. Stir in 1 teaspoon of vanilla extract.
Combine Mixtures
Gradually mix the dry ingredients into the wet ingredients, alternating with 1 cup of milk, until just combined.
Prepare Chocolate Cream
In a small saucepan, heat 1/2 cup of heavy cream until it just begins to simmer. Pour over 1/2 cup of dark chocolate chips and let sit for 1 minute. Stir until smooth.
Fill Muffin Cups
Fill each muffin cup halfway with batter. Spoon a teaspoon of the chocolate cream into the center of each, then cover with more batter until the cups are 3/4 full.
Bake
Bake for 20 minutes, or until a toothpick inserted into the muffin (not the cream center) comes out clean.
Cool and Serve
Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
