Read instructions and get ready to cook
Process the oats
Place oats in a blender or food processor. Pulse until the oats become a coarse flour consistency. Transfer to a large bowl.
Prepare the banana
Peel the banana. Break into chunks.
Blend wet ingredients
Add banana chunks, eggs, almond milk, maple syrup, and vanilla to the blender. Blend until smooth and well combined.
Add dry ingredients
Add baking powder, cinnamon, and salt to the oat flour in the bowl. Whisk to combine.
Combine wet and dry mixtures
Pour the wet ingredients from the blender into the bowl with the dry ingredients. Stir until just combined. Do not overmix; a few small lumps are fine.
Let batter rest
Allow the batter to rest for 5 minutes. This gives the oats time to absorb some of the liquid.
Heat the pan
Heat a non-stick skillet or griddle over medium heat. Add a small amount of coconut oil to coat the surface.
Cook the pancakes
Pour 1/4 cup of batter for each pancake onto the hot skillet. Cook until bubbles form on the surface, about 2-3 minutes.
Flip the pancakes

Add more oil as needed
Add a small amount of additional coconut oil to the pan between batches if needed.
