Read instructions and get ready to cook
Prepare rice
Rinse the sushi rice in cold water until the water runs clear.
Cook rice
In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce heat and simmer covered for 18 minutes.
Make sushi vinegar
In a small bowl, mix rice vinegar, sugar, and salt until dissolved.
Season rice
Transfer the cooked rice to a large bowl. Gradually fold in the sushi vinegar mixture while fanning the rice to cool it down.
Prepare vegetables
Peel and julienne the cucumber and carrot. Slice the avocado thinly.
Prepare salmon
Cut the smoked salmon into thin strips.
Assemble sushi base
Line a 8-inch square baking dish with plastic wrap. Place two nori sheets on the bottom, slightly overlapping.
Layer rice
Spread half of the seasoned rice evenly over the nori sheets.
Create mosaic pattern
Arrange the vegetables and salmon in a mosaic pattern on top of the rice layer.
Add final rice layer
Carefully spread the remaining rice over the mosaic layer.
Cover with nori
Place the remaining nori sheets on top of the rice, slightly moistening the edges to seal.
Compress and chill
Cover with plastic wrap and place a weight on top. Refrigerate for at least 30 minutes.
Slice and serve
Remove from the dish, unwrap, and cut into squares. Sprinkle with sesame seeds and serve with soy sauce.
