Make the crust

In a food processor, pulse the all-purpose flour, unsalted butter, sugar, and salt until the mixture resembles coarse crumbs. Gradually add the ice water, pulsing until the dough comes together. Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for 30 minutes.

Prepare the oranges

Zest 2 of the oranges and set the zest aside. Peel all 4 oranges, removing the white pith. Slice the oranges into thin rounds and set aside.

Make the custard

In a saucepan, whisk together the heavy cream, eggs, granulated sugar, cornstarch, orange zest, and vanilla extract until smooth. Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon, about 8-10 minutes. Remove from heat and let cool slightly.

Preheat the oven

Preheat the oven to 375°F (190°C).

Roll out the crust

On a lightly floured surface, roll out the chilled dough into a 12-inch circle. Transfer the dough to a 9-inch tart pan with a removable bottom, pressing it into the sides and trimming the excess.

Fill and bake the tart

Pour the cooled custard into the prepared crust. Arrange the orange slices on top of the custard in a circular pattern. Bake the tart for 35-40 minutes, or until the crust is golden brown and the custard is set.
