Make the crust

Crush graham crackers into fine crumbs using a food processor or putting them in a resealable bag and crushing with a rolling pin. Mix crumbs with melted butter and 1/4 cup sugar in a bowl until well combined. Press mixture firmly into the bottom of a 9-inch springform pan.

Make the filling

In a large bowl, beat softened cream cheese and 1/2 cup sugar with an electric mixer on medium speed until smooth. Beat in vanilla extract. In a separate bowl, whip heavy cream with an electric mixer until stiff peaks form. Gently fold whipped cream into the cream cheese mixture until well blended.

Assemble cheesecake

Pour cheesecake filling over the prepared crust in the pan. Spread filling evenly. Cover and refrigerate for at least 4 hours or overnight until firm.

Serve

When ready to serve, remove sides of the springform pan. Slice cheesecake and serve chilled. Store any leftovers covered in the refrigerator.
