Prepare the falafel mixture
Drain and rinse the chickpeas. Add them to a food processor along with the roughly chopped onion, parsley, cilantro, 2 minced garlic cloves, cumin, coriander, salt, and black pepper. Pulse until the mixture is well combined but still slightly chunky.
Form the falafel patties
Transfer the mixture to a bowl. Stir in the baking powder and flour. Form the mixture into 12 patties, about 2 inches in diameter and 0.5 inches thick.
Fry the falafels
Heat the olive oil in a large skillet over medium-high heat. Fry the falafels in batches for 3-4 minutes per side until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.
Prepare the tzatziki sauce
Grate the cucumber and squeeze out any excess liquid. In a bowl, mix the Greek yogurt, grated cucumber, remaining 2 minced garlic cloves, chopped dill, juice of 1 lemon, and tahini. Season with salt and pepper to taste.
