Preheat your waffle iron according to the manufacturer's instructions.
In a large bowl, whisk together the flour, baking powder, and salt until well combined.
In a separate medium bowl, whisk the eggs until lightly beaten. Add the yogurt, milk and vanilla and whisk until smooth.
Melt the butter in the microwave or in a small saucepan on the stovetop. Let cool slightly.
Pour the yogurt mixture and melted butter into the flour mixture. Gently mix with a rubber spatula until just incorporated. Some small lumps are okay. Don't overmix.
Spray the preheated waffle iron with nonstick spray if needed. Pour in enough batter to cover the waffle grid (amount varies by waffle iron size). Close the waffle iron and cook until the waffles are golden brown, about 3-5 minutes.
Transfer cooked waffles to a wire rack placed on a baking sheet and keep warm in a 200°F oven while you cook the remaining waffles. Serve hot with desired toppings.
