Prepare the vegetables
Dice the onion and carrot. Cut the zucchini into half-moons. Mince the garlic cloves. Slice the green onions thinly, separating the white and green parts.
Cook the bacon
In a large skillet or wok, cook the bacon over medium heat until crispy, about 5-7 minutes. Remove the bacon from the skillet and chop it into small pieces.
Stir-fry the vegetables
In the same skillet, heat the vegetable oil over medium-high heat. Add the diced onion, carrot, zucchini, minced garlic, and white parts of the green onions. Stir-fry for 3-4 minutes, or until the vegetables are tender-crisp.
