Read instructions and get ready to cook
Prepare the Oat Flour
Add rolled oats to a blender and blend until a fine flour forms.
Add Wet and Dry Ingredients
To the blender, add almond milk, peeled banana, Plant-Based protein powder, matcha powder, baking powder, and vanilla extract.
Blend Until Smooth
Blend all ingredients until a thick, smooth batter forms. Let rest 5 minutes.
Heat the Pan
Heat a non-stick skillet over medium heat. Add a little olive oil and swirl to coat.
Cook the Pancakes
Pour 1/4 cup batter per pancake. Cook 2–3 minutes until bubbles form, then flip and cook 1–2 minutes more. Repeat.
Serve Warm
Stack pancakes and serve warm with fresh berries, nut butter, or a drizzle of maple syrup (optional).
