Read instructions and get ready to cook
Season chicken
Place 2 chicken breasts on a plate. Rub with 1 tbsp olive oil, 1 tsp salt, and ½ tsp black pepper.
Grill chicken
Heat grill or grill pan over medium-high. Cook chicken for 6–7 minutes per side until cooked through.
Prep cauliflower
Cut 1 small cauliflower into florets. Pulse in food processor until rice-like.
Prep aromatics
Peel and mince 3 garlic cloves. Chop 2 tbsp parsley. Cut 1 lemon in half.
Cook cauliflower rice
Heat 1 tbsp olive oil in skillet. Add garlic, sauté 1 minute. Stir in cauliflower rice, cook 5 minutes.
Finish and serve
Squeeze lemon juice over cauliflower rice. Stir in parsley. Slice chicken and serve on top.
