Preheat Oven

Preheat your oven to 325°F (165°C).

Prepare Vegetables

Peel and quarter 1 large onion. Peel and chop 2 medium carrots into 1-inch pieces. Set aside.

Season Lamb Shanks

Season the lamb shanks with 1 teaspoon of salt and 1/2 teaspoon of black pepper.

Brown Lamb Shanks

In a large oven-proof pot, heat 2 tablespoons of olive oil over medium-high heat. Add the lamb shanks and brown on all sides, about 2-3 minutes per side. Remove the shanks and set aside.

Sauté Vegetables

In the same pot, add the quartered onion and chopped carrots. Sauté for about 5 minutes, or until they start to soften.

Prepare Garlic

While vegetables are sautéing, peel and mince 8 cloves of garlic.

Add Garlic and Herbs

Add the minced garlic, 2 sprigs of fresh rosemary, and 2 sprigs of fresh thyme to the pot. Sauté for another 2 minutes.

Deglaze with Wine

Pour 1 cup of red wine into the pot, scraping up any browned bits from the bottom. Allow to simmer and reduce by half, about 5 minutes.

Return Lamb and Add Broth

Return the lamb shanks to the pot. Add 2 cups of beef broth. Bring to a simmer.

Slow Cook in Oven

Cover the pot with a lid or tightly with foil. Transfer to the preheated oven and cook for 2 to 2.5 hours, or until the lamb is tender and falls off the bone.

Serve

Carefully remove the lamb shanks from the pot. Strain the cooking liquid and serve it as a sauce over the lamb.
