Prepare the potatoes

Wash and dice the potatoes into 1/2-inch cubes. Place them in a microwave-safe bowl, cover with water, and microwave for 5 minutes, or until slightly tender. Drain the potatoes and set aside.

Cook the sausage

In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the breakfast sausage and cook, breaking it up with a wooden spoon, until browned and cooked through, about 5-7 minutes. Remove the sausage from the skillet and set aside.

Sauté the vegetables

Dice the onion and bell peppers. Mince the garlic cloves. In the same skillet, heat the remaining 1 tablespoon of olive oil. Add the diced onion and bell peppers, and cook until softened, about 5 minutes. Add the minced garlic, smoked paprika, salt, and black pepper. Cook for an additional 1-2 minutes, stirring constantly.

Add potatoes and sausage

Add the par-cooked potatoes and cooked sausage to the skillet. Stir to combine and spread the mixture evenly in the pan. Cook, undisturbed, for 5-7 minutes, or until the potatoes are crispy and golden brown on the bottom.

Cook the eggs

Create 4 wells in the potato mixture using the back of a spoon. Crack an egg into each well. Cover the skillet and cook for 5-7 minutes, or until the egg whites are set and the yolks reach your desired level of doneness.

Serve

Remove the skillet from the heat and serve the breakfast hash hot, garnished with chopped fresh herbs, if desired.
