Steps
Read instructions and get ready to cook
Preheat the oven
Preheat the oven to 425°F (220°C).
Prepare the garlic and herb rub
Mince the garlic cloves. Remove the leaves from the rosemary and thyme sprigs and finely chop them. In a small bowl, mix the minced garlic, chopped herbs, Dijon mustard, olive oil, salt, and black pepper to form a paste.
Coat the beef tenderloin
Rub the garlic and herb paste all over the beef tenderloin, ensuring it is evenly coated.
Sear the beef tenderloin
In a large, oven-safe skillet or cast-iron pan, melt the butter over medium-high heat. Sear the beef tenderloin on all sides until browned, about 2-3 minutes per side.
Roast the beef tenderloin
Transfer the skillet with the seared beef tenderloin to the preheated oven. Roast for 20-25 minutes for medium-rare, or until the internal temperature reaches 135°F (57°C).
Rest and slice the beef tenderloin
Remove the beef tenderloin from the oven and let it rest on a cutting board for 10 minutes. Slice the tenderloin into 1/2-inch thick rounds.
Serve
Arrange the sliced beef tenderloin on a serving platter. Serve hot with your favorite side dishes.
